Week of Cooking

This is the week of cooking for Nicole and I! Yesterday, in preparation for the huge lunch we will be making tomorrow, Nicole and I made tortillas from scratch. Today, I made a breakfast for Nicole, myself and six of our roommates, which included Pancakes, two toppings1, and bacon. Mom, Grandma, Mamaw, and anyone else who has ever made me breakfast… thank you! I never realized how difficult of a task it is to make breakfast for a large group. It could’ve been worse… we didn’t start the meal till nearly 12:00pm; I actually got a couple legit complaints that the breakfast was too early.
Tomorrow Nicole and I will be making a bit of tex-mex for the roomies. Fajitas, to be more specific. We’ve bought everything we need to make the meat, tortillas from scratch, salsa picante, and guacamole. I’m quite excited for the big cookout… and the spicy food as well; we don’t get much spicy food here in Argentina.
With regards to cooking, I encountered a great cooking blog! The title of the blog is Homesick Texan, and it is filled with great recipes from Texas! There are many things I love about Texas, and I must stay that the food is quite high on the list. Homesick Texan does a great job of writing very captivating articles to accompany the delicious recipes. So far I’ve tried out the Pancakes and the Tortillas, both of which I highly recommend.

I went on the Texan site. It made me very homesick for all things Texas. It really made me want to make the peach ice cream of all things! Oh, glad to see you embracing your Texas roots!!!!Yee haw!!!
Let’s not forget about the delicious pound cake I whipped up.
